Pectin is mainly composted of methyl esters of polygalacturonic acid and their calcium, ammonium, potassium and sodium salts. Pectin is considered soluble dietary fiber. Pectin is recommended in medical and therapeutic diets by the Ministry of Health of Republic of Bulgaria with Letter No 2467-1058/1998.
